Butternut Squash Custard

This wonderful side dish is a great way to use your butternut squash and make something light, soft, and warm to go with your savory main dish or other sides. It would be a wonderful addition to any holiday table. Lightly sweet, this silky custard melts in your mouth.
1 medium butternut squash (no more than 3 lbs), peeled, seeded and cut into large cubes
1/2 cup flour
1/2 cup brown sugar
2 cups milk (whole milk works best)
3 eggs
2 TBSP butter, melted
1/4 tsp salt
1/2 tsp ground cinnamon
a pinch of nutmeg
Preheat oven to 350 degrees.
Place squash in large sauce pan and cover with water. Add 1 TBSP salt and bring to a boil. Cover, reduce heat and simmer for about 10 minutes, or until tender. Drain.
Transfer squash to a large bowl. Add flour and sugar and mash with potato masher making sure to mix in the flour and sugar. Add the milk, eggs, butter and spices, and blend well with an electric mixer.
Put contents into a greased 2 1/2 quart casserole dish. Place in 350 degree oven (uncovered) for about 60 minutes, or until center is set (when a thin knife inserted into center comes out clean). Allow to cool for a few minutes before serving.
