Oatmeal Waffles

These delicious and easy waffles bring a good oatmeal flavor and remain crispy on the outside, and soft on the inside. Perfect with butter and syrup, or with fresh berries and a little whipped cream. And they give you an excuse to dust off that waffle iron! Perfect at breakfast, brunch or dinner!

1 1/2 cups all purpose flour
1 cup rolled oats (quick or old fashioned)
1 TBSP baking powder
1 tsp cinnamon
1/4 tsp salt
1 1/2 cups milk
2 eggs, slightly beaten
2 TBSP brown sugar
6 TBSP butter, melted

Get two large mixing bowls. In one, combine flour, oats, baking powder, cinnamon and salt. Mix well and set aside.

In the other mixing bowl, combine milk, eggs, brown sugar and butter. Whisk until well mixed.

Add the wet ingredients to the dry ingredients and stir until completely combined. Let rest for 5 to 10 minutes. While waiting, heat up the waffle iron!

Grease the grids of your waffle iron before adding batter (I use cooking spray). Add appropriate amount of batter, close lid and bake until little or no steam comes from waffle iron. Do not open lid early - it will tear the waffles. Use a fork to remove waffle from grid and transfer to plate. Spread with butter and top with warm syrup or fresh fruit.
