Pineapple Slices in Jello

A recipe from the vintage magazine collection showed a fun, new way to use pineapple! This is something I've been wanting to try for a long time, but never got around to it. The original recipe in the magazine (1950's) featured lime gelatin, but I always liked the orange-pineapple combination, so I used orange. You could use any flavor, but you must only use half the water called for in the gelatin recipe. If you use a 3 ounce box, you will need 1/2 cup of boiling water and 1/2 cup of cold water. This would be a great project for kids (of all ages!) and is a nice treat as-is or can be made into an attractive salad by placing it on a bed of lettuce and adding some cottage cheese.

Pineapple Slices in Jello

1- 20oz can sliced pineapple (packed in juice)
1 -3oz box of Jell-O (orange, lime, or favorite flavor)
1/2 cup boiling water
1/2 cup cold water

Open pineapple can and drain, reserve juice and enjoy later or mix it into a cocktail or other beverage.

Empty contents of Jell-O packet into bowl. Add boiling water and stir well until dissolved, about two minutes. Add cold water and stir for another minute or two. Carefully pour liquid into pineapple can, leaving about 1/4 inch of space at top of the can. You will have some liquid left over - pour into small bowl or cup and refrigerate to enjoy later.

Wrap top of pineapple can with plastic wrap and secure with rubber band. Place in refrigerator for 4-6 hours, until completely set. Remove from refrigerator and place can in bowl with warm water (so water goes about 3/4 up can) for 20 seconds or so. Invert can with top side down on to a plate and remove the bottom of the can.

If the pineapple can had a "pull tab" style top, then you don't want to remove through the top, instead remove it from the bottom. A gentle push and shake of the can should be enough to have the contents slide out of the can and on to the plate. Using a large thin knife, cut in between the pineapple slices and serve.
