CHICKEN MUSHROOM & SPINACH GNOCCHI

This dish is perfect for the colder weather and it is super easy to make. Impress your family and friends with the finished presentation. E n j o y
▶︎INGREDIENTS
- 1 tbsp. olive oil
- 2 cups sliced bella mushrooms
- 1/2 yellow onion
- 1 ½ tsp. minced garlic
- 4 tbsp. butter
- 1/4 cup all-purpose flour
- 2 tsp. chicken seasoning
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. nutmeg
- 1/4 tsp. cayenne pepper
- 1 ¼ cups chicken broth
- 2 cups 2% milk, or whole
- 2 cups spinach
- 1/2 of whole rotisserie chicken
- 16 oz. gnocchi
- 1 cup parmigiano reggiano
- Handful of fresh parsley

▶︎INSTRUCTIONS
- In a 12 in. oven-safe skillet, over medium-high heat, pour in the olive oil
- Add in the mushrooms and chopped onion and stir until the onion is transparent and mushrooms browned about 5-6 minutes
- Add in the garlic and stir for another 30 seconds. Remove to a small bowl or plate
- Preheat oven to 425F
- Place the butter in the skillet and melt. Gradually whisk in the flour until smooth
- Add in the chicken seasoning, salt, black pepper, nutmeg, and cayenne pepper
- Gradually whisk in the chicken broth, then the milk. Allow the mixture to thicken, then add in the cooked mushrooms and onions
- Add spinach, prepared chicken, and gnocchi
- Stir until all is coated
- Top with parmesan cheese and put in oven
- Bake for 20 min. or until sauce is bubbly. If desired, turn on the broiler for 5 min. for a crispy top
- Remove from oven, add some chopped fresh parsley, eat immediately
