Vegan Beignets
A beignet is a deep-fried pastry. These taste so good right after making them! E n j o y
▶︎INGREDIENTS
- 1 ½ cups all-purpose flour
- 3 tbsp cane sugar
- ½ tbsp. baking powder
- ½ tsp salt
- 1 tsp vanilla extract
- ¼ tsp ground cinnamon
- 1 lemon zest
- 1 cup water
- 2-3 cups EVOO or Canola Oil (for frying)
- 2 tbsp powdered sugar (to sprinkle)
▶︎INSTRUCTIONS
- In a large bowl, add the flour, sugar, salt, baking powder, vanilla, lemon and cinnamon and mix them well.
- Add the water
- Use a silicone spatula to mix everything together, you should have a smooth batter.
- Heat up the oil in a deep frying pan.
- Use a spoon to scoop batter, and carefully dip it in the pan.
- *Fry for 5 minutes until golden brown, then turn on the other side. You will notice than once they are turned on the other side, they become from flat nice and round.
- Transfer on a plate lined with kitchen paper and once they cool down a bit, sprinkle with powdered sugar.
*Because this has a vegan twist, there is no milk, substituted by water, or eggs. Egg helps bind the ingredients and helps fluff up the beignets. With that being said, I had to cut the spoon portion in half and make them smaller than their average size. I found that the larger ones I first made were still raw in the middle but golden on the outside (the oil temp. was good). If you find the solution please feel free to comment because I would like to make them bigger! But I like this size also.
