BLACK CAKE GUYANESE GYAL STYLE
INGREDIENTS:
1 Lb. Butter (I use salted butter, if you use unsalted butter you need to add 1/2 TSP Salt).
1 Lb. Brown Sugar
10 Eggs If they are small or 8 Eggs If the are large.
2 TBSP Mixed Essence ( 1 TBSP for butter and sugar mixture, 1 TBSP for eggs)
2 Lbs. Tropical Fruit mix (preserve in alcohol)
1 Lb All purpose flour.
1 Tsp Baking Powder
1 Tsp Grated nutmeg
1 Tsp Ground Cinnamon
1 Tsp Five Spice
1 Tsp Ground Cloves
1 Tsp Orange Peel
1 1/2 cup Cake Colouring/ Browning Caramel( Use Cake Colouring to your preference)
2 Cups Cherry wine/Brandy to soak cake after finish baking.
Note: You can use any Brown Rum or wine you prefer.
Remember when u finish baking your cake add 1/2 or 1 cup of the wine, cover your cake properly in airtight container, wait 2 or 3 days if it dries out add the remaining wine or rum, you want your cake to be moist.
