Make Your Own Taco Bell Enchirito

Are you missing that Enchirito that Taco Bell no longer makes? I know I am. I found a lovely recipe online that comes pretty close to what I remember. And I can add more of the ingredients I love, like onions and olives. This is from a website called: Copykat.com. I tweaked it a little bit to cut back on the sodium, but let's face it...it tastes better with the salt. Here's the original recipe.
Beef:
1 1/2 T masa harina
4 1/2 t chili powder
1/2 t onion powder
1/2 t seasoning salt
1/2 t paprika
1/4 t ground cumin
1/2 t garlic salt
1 t dried minced onion
1/2 t beef bouillon powder (I used the wet kind in a jar).
1 to 1 1/3 pounds ground chuck or hamburger
As my ground beef is usually frozen these days, I take a package and cook it in about a cup of water to thaw it. Mash it up with a biscuit cutter or a potato masher to get the small texture you're used to from TB. Drain the water and the oil from the beef. I usually ladle out what I can and catch the last of it with a clean paper towel mashed down into the bottom of the pot with a spoon or something. Add back in about 1/2 cup or a cup of water and cook with the spices until much of the moisture has gone, but the mixture is still nice and moist. Set aside.

Sauce:
1 8 oz can of tomato sauce. I used low sodium, but it tastes best with all the salt.
1/3 C of water
1/4 t chili powder
1 1/2 t cumin
1 1/2 minced onions (I screwed up and used the dried kind again, but it still tasted good).
1 T white vinegar
1/2 t garlic powder
1/2 t garlic salt
1/4 t paprika
1/4 t sugar
1/4 cayenne pepper (I accidentally forgot this ingredient too--it's optional, but it's good!)
Combine ingredients and simmer on low temperature for 15-20 minutes.

Other Ingredients for construction of your Enchiritos.

4 flour tortillas (8 corn if you want to go old school).
1 C refried beans
1 C cheddar cheese
1/4 C chopped white onion
Olive slices (optional)

Assembly:
Schmear beans on tortillas, about 1/4 cup. Add meat mixture, about 1/4 of the amount that you have. Sprinkle onions over meat to taste. Roll tortilla over all and place in dish seam side down. Ladle sauce over all. Sprinkle with about 1/4 C cheddar cheese. Sprinkle olives over to taste. Microwave until hot and melty.

Alternative Oven Baking:
For presentation even better than Taco Bell, assemble all 4 of the Enchiritos and bake in a non-stick sprayed, ovenproof dish.

Enjoy with spork if possible.
