Shrimp Scampi Fettuccine

How to cook Shrimp Scampi Fettuccine.

It's Lent, right now, and Whole Foods in my town has this Shrimp Scampi mix ready-made. It would be easy to re-create though, just:
3/4 lbs. raw, deveined, shelled shrimp
2 to 3 cloves chopped garlic
1 tablespoon chopped Italian Parsley
1 drizzle of good (real) olive oil

Sauté and enjoy alone, or make a restaurant-style shrimp scampi pasta dish.

Prepare about half a package of fettuccine
(Optional) Steam/cook a small (5oz) package (or grow your own) of baby spinach. You can add it in to the sautéing shrimp, once it's almost done cooking, but don't overcook the shrimp to boil the spinach.

Sauté the scampi mixture in 2-3 tablespoons of olive oil, over medium high heat. Add spinach. Stir in prepared pasta, or serve over a bed of pasta when you plate. Stir in about a 1/4 cup of freshly grated Parmesan cheese. Stir in about 1/4 cup of chopped Italian Parsley.

Plate. Sprinkle a good Italian cheese blend over the top after salting and peppering to taste. More olive oil may be added as well.
