Make your own Cherry Mash bars.

Cherry Mash Bars

This is a little more healthy version of Cherry Mash bars. Easy to make and yummy.
You'll need:

Centers:
1-12 ounce package marshmallows
1- 8-12 ounce package unsweetened coconut
1-8 ounce jar of Maraschino cherries, chopped, reserving at least 2 tablespoons of juice.
1/4 to 1/3 cup margarine or butter.

Coating:
1-1 pound package chocolate coating, plus about 1/2 cup of good chocolate chips. Or a 1 pound package of good chocolate for dipping, like semi-sweet Ghirardelli chocolate chips.
1-1 pound package/jar of unsalted peanuts (or fancier nut for posh) chopped roughly in food processor.

Melt marshmallows in large microwave-safe bowl for about a minute, until just soft enough to stir.
Add in unsweetened coconut 1/3 pkg at a time. Stir. Add in margarine and blend in. Heat a little more in the microwave if necessary. Add 2 tablespoons (or more to taste) of the cherry juice. Add chopped cherries. Mix. Cover bowl with plastic wrap and refrigerate until firmish. Mixture doesn't get really hard, though it may if you use butter. Mixture will stay good for several days.

When firm enough to handle, remove from fridge and scoop out into balls about the size of a walnut. Place on wax paper on a cookie sheet. Mixture will have warmed by the time you're done, so put back in the fridge while you prepare the coating.

Melt chocolate in microwave safe bowl in 30 minute increments. Stir. Repeat until a good dipping consistency, and no more than your own body heat in temperature. Have chopped peanuts standing by.

Dip each center into chocolate with fork. Let excess chocolate drip off. Drop into nuts. Cover with chopped nuts and place back on the cookie sheet. Repeat until they are all done.

Candy should be firm enough to place in a ziplock back when you're done with the cookie sheet. Keep in fridge for a nice crunchy outside shell.
