最具代表性的大埔美食之一【笋粄】 Making traditional Hakka Bamboo Shoot Dumplings

大埔笋粄曾荣获“中华名小吃”,“广东客家名小吃”的称号。它也是传统的汉族小吃。制作分为两个部分,粄皮和内馅。粄皮是用木薯粉和芋头为材料。内馅则用半肥瘦的猪肉和竹笋作主材料。竹笋用冬笋最好吃。

Dabu 'Sunban' has been awarded the title of "Chinese Famous Snacks" and "Guangdong Hakka Famous Snacks". It is also a traditional Han snack. The making is divided into two parts, the dumpling skin, and the filling. The dumpling skin is made of tapioca flour and taro. The filling is made of half-fat pork and bamboo shoots. Winter bamboo shoots are the best.

Ingredients of skin/ 粄皮材料:
Taro slices 芋头片 500g
Tapioca flour 木薯粉 200g
Salts 盐 1tsp/ 1茶匙
Cooking oil 食用油 2tsp/ 2茶匙
Water 水 Right amount/ 适量

Ingredients of filling/ 内馅材料:
Bamboo shoots 冬笋 125g
Minced pork 猪肉碎 150g
Fried 5 spices tofu 五香豆腐干 80g
Dried shiitake mushrooms 干香菇 20g
Shallots 小洋葱 20g
Seasoning/ 调味料:
C/Stock powder 鸡精粉 1tsp/ 1茶匙
Oyster sauce 蚝油 1tbsp/ 1汤匙
Fish sauce 鱼露 Right amount/ 适量
Sugar 糖 1/2 tbsp/ 半汤匙
Sesame oil 麻油 1/2 tbsp/ 半汤匙
