咸水角是粤、港、澳地区的传统小吃。我把里面的馅料配上潮州地方常见的风味。希望你们喜欢。
Crispy Dumplings with Salty Stuffing is a traditional snack in Guangdong, Hong Kong and Macau. I have replaced the stuffing ingredients with the local flavor of Teochew. Hope you all like it.

Ingredients/ 原材料
Filling/ 馅料:
Lean pork(diced) 瘦肉丁 100g
Dried shiitake mushroom 干香菇 3 pcs/ 3粒
Preserved vegetable strips 菜脯条
(salted) (咸) 50g
Dried shrimp 干虾米 35g
Peanuts 花生米 35g
Onion 洋葱 35g
Chinese chives 韭菜 35g
Cooking oil 食用油 3 tbsp/ 3汤匙
Seasoning/ 调味料:
Oyster sauce 蚝油 1½ tbsp/ 1½汤匙
Salt 盐 ⅓ tsp/ ⅓茶匙
MSG 味精 ½ tsp/ ½茶匙
Sugar 糖 1 tsp/ 1茶匙
Pepper 胡椒粉 a pinch/ 少许
Dark soy sauce 老抽 appropriate/ 适量
Mushroom water 香菇水 3 tbsp/ 3汤匙
Starch water 淀粉水 a little/ 少许
5 spices powder 五香粉 ½ tsp/ ½茶匙
Sesame oil 香油 appropriate/ 适量
Wrapper skin/ 皮原料:
Glutinous rice flour 糯米粉 250g
Room temp. water 室温水 190g
Fine sugar 细砂糖 75g
Lard or shortening 猪油或酥油 75g
Wheat starch 小麦淀粉(澄面粉)75g
Hot water 热水 75g
