Crab Benedict

Ingredients:
8 oz cooked crab meat
4 english muffins, toasted
4 eggs, poached*
Vinegar (for poaching the eggs)
Arugula

Hollandaise Sauce:
3 egg yolks
1 TBSP lemon juice
1 tsp Dijon mustard
½ tsp salt
¼ tsp pepper
1 stick butter, melted
