In this video, I show you how to make my easy gingerbread biscuits, which of course you can really make all year round. Yum. I make gingerbread men (to hang on my Christmas tree) and gingerbread stars to decorate my Carrot & Ginger Layer Cake, which you can find here....

INGREDIENTS & METHOD

Ingredients

350g plain flour
1 tsp bicarbonate of soda
2 tsps good quality ground ginger
115g cold unsalted butter (cubed)#
175g soft light brown sugar
60g golden syrup
1 large egg (lightly beaten)

Method

Preheat your oven to 190/170 fan

In your food processor mix together all the dry ingredients and the cold butter. Simply put it on and turn on the processor for around 15 seconds

(If you do not have a processor this can be done by hand. Place all the dry ingredients into a large bowl and using your fingertips rub the flour mixture and the butter together until it makes fine breadcrumbs. Do this lightly and gently)

In a jug mix whisk together the golden syrup and the lightly beaten egg and slowly pour it down the shoot while pulsing the mixer at the same time. Stop when a dough has been formed.

(If you don't have a food processor add the egg and syrup by hand and mix with a wooden spoon. Finish off by pouring onto a clean surface and knead until smooth)

Divide your dough in half, shape into two disks and wrap in cling film. Place one in the fridge and one in the freezer for 10 mins to harden slightly.

After 10 mins roll out the dough onto a floured surface and cut out shapes using any cookie cutter you like!

Push sprinkles chocolate chips, raisins or anything you fancy into the cookies and bake for 9-11 mins.

Leave to cool on a cooling rack before eating or decorating with icing.
