How to Make a Piñata Cupcakes with Rainbow Swirls (My Little Pony inspired) | Stacey Dee's Kitchen

INGREDIENTS & METHOD

Ingredients

250g Caster sugar
200g unsalted butter
250g Plain Flour
3 tsps baking powder
260 ml whole milk
2 large eggs
2 tablespoons strawberry flavouring essence (I used Preema)
Method for the strawberry cupcakes

Cream together the butter and sugar until light and fluffy
Whisk together the flour and baking powder and sift into the bowl
Beat the egg, milk and the strawberry essence and slowly pour into the bowl with the butter mix alternating with the flour
Mix until just combined
Spoon mix into the cases until ⅔ full
Bake 20 mins/ until skewer comes out clean
Cool on wire rack and make the icing

Rainbow Icing

250 Unsalted very soft Butter
700g Icing Sugar
50ml Whole Milk
Food Colouring - red, orange, yellow, green, blue, purple electric pink

Method for the icing

Place the butter in the KitchenAid and add the icing sugar. Add the milk and slowly whisk together.
Change to the paddle attachment and with speed on high mix for around 3 mins until very light and fluffy
Split the buttercream into 7 bowls and add the food colouring and mix into each one
Spoon the buttercream into individual icing bags
Lay a piece of cling film flat on the table and pipe a tube of each colour icing next to each other
Fold over the cling film so the colour lay on top of each other
Twist the ends of the cling film
Place the open star icing nozzle into a large piping bag and then carefully put the buttercream cling film wrap into it
When piped now there should be a rainbow swirl on the cake!
