豆酱虾 Fried Prawn with Minced Bean Paste
豆瓣酱本质很咸。所以,当用豆瓣酱做菜时,建议加入酸梅酱和糖来综合豆瓣酱的咸度。我们家的口味比例是2:1:0.5 (豆瓣酱:酸梅酱:糖),你们家又是什么比例的?

准备时间:20分钟
煮时:15分钟
材料:
8只/200克 大虾
1段/ 50克 幼姜 (去衣剁碎)
4粒 小葱头(去衣剁碎)
4瓣 蒜头(去衣剁碎)
3条 小辣椒 (切小粒)
2汤匙 豆瓣酱
1汤匙 酸梅酱
1茶匙 糖
少许 水
3汤匙 油
少许 葱
准备工作:
1. 把虾只修剪,去肠泥,洗净,沥干
做法:
1. 烧热锅,下油待热
2. 加入虾煎至变色,翻另一面再煎至全只呈粉红色,起锅待用
3. 倒入姜末,蒜末,葱头,小辣椒, 爆香炒匀
4. 下豆瓣酱和酸梅酱,炒匀
5. 加水和糖调味(也可自行加入酱油,跟自己喜好)
6. 倒入虾和葱花, 快炒5秒
7. 熄火,上碟,洒上葱花,完成

Cook Time: 15 minutes
Ingredients:
8 pc / 200g large prawn
1 pc / 50g ginger (peel off skin, mince it)
4 pc shallot (peel off skin, mince it)
4 cloves garlic (peel off skin, mince it)
3 pc cili padi (slice it)
2 tbsp minced bean paste
1 tbsp sour plum sauce
1 tsp sugar
Some water
3 tbsp oil
Some spring onion
Preparations:
1. Trim off prawn’s legs and feelers, devein them, rinse and drain.
Steps:
1. Heat up oil in a pan.
2. Fry the prawns on both sides until cooked, set aside.
3. Add in ginger, garlic, shallot, chilli padi, saute until fragrant.
4. Pour in minced bean paste and sour plum sauce, fry evenly.
5. Add in water and sugar for seasoning. (Feel free to add soy sauce to your own preference)
6. Add in prawn and spring onion, fry quickly for 5 seconds.
7. Dish up and dress it with spring onion, enjoy!
