五宝斋菜 Five Treasure Vegetables (Vegetarian)
家里有拜神的应该都有用斋菜包做拜神贡品吧?这类斋菜包通常都有5种素料食材那就是腐竹片,冬粉,红枣,云耳和金针组成的。今年, 我们家的初一贺年斋菜就是用这斋菜包的食材再加上新鲜食材一起炒的。
老人家常讲,初一吃斋,福康一整年。明天是初一,就来个斋菜日吧!在此,也祝大家在这艰难的疫情下,大家都能平平安安,健健康康,盆满钵满的度过新的一年!
分量:5-6人份
准备时间:10分钟
煮时:15分钟
材料A:
200克 包菜(撕小片)
1小段/10片 胡萝卜
1棵 芹菜
5粒 红枣(去籽)
1小把/10克 云耳
1小把/20克 金针
1小把/20克 冬粉
1片 腐竹片
材料B:
1汤匙 酱油
½ 茶匙 盐
1碗 水(盖过菜)
2汤匙 油
准备功夫:
1. 云耳和冬粉各自泡软, 沥水待用
2. 金针泡温水30分钟,剪去花蒂,洗净挤去碱味
3. 腐竹片抹净,爆至金黄色,沥油待用
煮法:
1. 同样的油锅,去掉多余的油,加入红枣,金针和云耳,炒匀片刻
2. 加入胡萝卜和包菜,伴炒至包菜变软
3. 加入热水和酱油,炒匀待滚
4. 加入腐竹和冬粉,炒匀盖上,文火焖3分钟
5. 起盖, 转大火伴炒
6. 加入盐和芹菜,炒匀收水
7. 熄火,上桌

Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients (Set A):
200 g cabbage (tear small pieces)
1 pc carrot
1 pc celery
5 pc red dates (remove the seeds)
10 g cloud ear fungus
20 g dried lily flower
20 g glass noodle
1 pc beancurd sheet
Ingredients (Set B):
1 tbsp soy sauce
½ tsp salt
1 bowl water (enough to submerge vegetables)
2 tbsp cooking oil
Preparations:
1. Soak cloud ear fungus and glass noodle separately, drain and set aside
2. Soak dried lily flower in warm water for 30 minutes, discard stalk, wash to remove odour
3. Wipe the beancurd sheet, saute until it turns golden brown, drain and set aside
Steps:
1. Using the same wok, discard excessive cooking oil, add red dates, dried lily flower, cloud ear fungus and fry briefly
2. Add carrot, cabbage and fry until cabbage softens
3. Add hot water, soy sauce and bring to boil
4. Add beancurd sheet, glass noodle and fry, cover with a lid and simmer for 3 minutes
5. Lift the lid, add salt to season
6. Add celery, fry briefly
7. Turn off the gas, it’s done!
