Island Cake - Winter Theme | Christmas Cake 2020 | Winter Lake Jello Cake | Gelatin Cake Tutorial

Who said it always has to be about Summer 🤔

Ever since we made the Island Cake for our kids birthdays I wanted to create another one. But this time I wanted to have go with Gelatin with a completely different theme❄️❄️❄️... something to do with Winter I thought... Well... I nearly gave up 😅

It all began well until it came to the Gelatine. The mixture wasn't right on my part. I followed the exact instructions on the packet. But Thank God I decided to double the mixture. Setting the jelly took longer than Agar Agar. We had to refrigerate the cake overnight just to be sure the jello would set right. This was probably the most stressful cake I've ever made. I sat there with my face in my palms waiting for a disaster to happen. I thought the minute we opened the acetate the jello would collapse😳
The process is pretty much the same if you've watched our Island Cake Tutorial. The only difference was that I didn't have to chill my cake this many times in the fridge with Agar Agar.
Especially with a fondant topper (red house) and the royal icing I thought it'd never make it through the night sitting in the fridge. But they were ok. I did see the royal icing sweating a bit on to the lake which we carefully wiped off with a kitchen towel. But I'd really recommend using white candy melts for the snow on the ground instead of the RI because of this situation. I would have used it if I had them on hand. White Choc is slightly off white/pale so I didn't go for it. Another option would be white buttercream. You could even pipe the trees with buttercream as well.

I used 3 x 8" cakes for this project.

The dusts I've used for the house are Sugarflair Red and black

For the RI trees I've used 2 separate colours Sugarflair Holly Green and Party Green.

For the lake Sugarflair Royal blue

To make the Grey Chocolate I mixed Sugarflair Black extra with melted white chocolate.

To make the modelling choc:

230g Dark choc
5 Tbsp Liquid Glucose or you can use Corn Syrup
To make the Gelatin:

60g Gelatin
1/2 Cup of water to bloom
1 tsp flavouring
1 1/4 cup water
70g sugar

You may need about half of this mixture.
