台灣古早味蛋糕,是一款用水浴法烤製的蛋糕。剛烤好的蛋糕可以抖來抖去,整個蛋糕豐滿細膩,口感濕潤,溫軟綿密。它會讓你吃了還想吃。
Taiwanese Castella Cake, it is baked in water bath. The freshly baked cake can be jiggly, the whole cake is plump and delicate, with a moist, soft and dense. It can let you after ate still want to eat.

成份:(8寸方形蛋糕模)(8寸圓模=成份X約0.8)
90g 低筋麵粉
100g 植物油(或無鹽牛油,可以和下面的100g牛奶煮至大概75℃/167ºF,倒入麵粉裏拌勻)
100g 牛奶(或杏仁奶,椰奶)
6個蛋黃
10g 玉米澱粉
1/4茶匙檸檬汁
6個蛋白
100g 糖

Recipe:(8in square cake pan)(8inch round = ingredient X about 0.8)
90g pastry flour(cake flour)
100g vegetable oil (or unsalted butter, you can cook with the100g milk below to about 75℃/167ºF, pour into the flour and mix well)
100g milk (or almond milk, coconut milk)
6 egg yolks
10g cornstarch
6 egg whites
1/4tsp lemon juice
100g sugar

温水浴,在预热好150℃(302ºF)炉内(底層)烤60分钟
Warm water bath, bake in oven(bottom) preheated to 150℃(302ºF) for 60 min
