Ingredients for dough:
2 cups all organic unbleached all purpose flour
1/2 cup almond flour
3 eggs
2 tbsp water
5oz butter
1/2 tsp Himalayan Salt
1 tsp Garlic powder
1 tsp Dill
Mix dry ingredients first in a separate bowl. Then do the same for all the liquids. Incorporate all the liquids to the dry mix in small portions until the dough is nice and smooth.
Filling:
1lb ground beef ( chicken, turkey or pork - it's up to you)
1/2 cup red onion (diced small)
4 boiled eggs (diced small)
1/2 cup raisins
1 tsp Cumin
2 tsp Garlic
1/2 tsp Black pepper
1 tsp Paprika
2 tsps Salt (to taste)
1 tsp oil (I used extra virgin olive oil)
1. Add oil on a medium heat skillet. Then add onions
2. When the onions are translucent add the meat and all the seasonings.
3. When meat is cooked to desired temperature add eggs and raising and mix it together. Let it rest until it's cool.
Assembling and baking the empanadas:
To assemble the empanadas, place a spoonful of the filling on the middle of each empanada disc.
The amount of filling varies based on the size of the empanada, however it’s easier to seal an empanada that isn’t overstuffed.
To seal the empanadas, fold the disc and seal the edges by pressing the dough with your fingers.
You can also use a fork to help seal the edges, just press the top of the fork against the edges.
If you want your empanadas to have a nice golden finish, then you can brush them with egg wash (a whole egg whisked or egg yolk plus a few drops of milk).
Bake the empanadas in a pre-heated oven.
Bake at 375F, the temperature will vary based on the oven and the size. I bake the smaller sized empanadas at 375F. The baking time is in the range of 25 to 30 minutes – the empanadas will be ready once they are golden.
