Three Sisters Vegetable Soup with Michael's Home Cooking

This Vegetable Soup uses the three plants Native Americans would plant together. I use corn, squash and beans for a great soup full of healthful fiber. It's delicious!
Ingredients:
2 Tablespoons olive oil
1 Tablespoon butter
1 big onion (1 and 1/2 cups chopped)
1 pound diced butternut squash
4 garlic cloves chopped roughly
2 Tablespoons tomato paste
1/2 teaspoon cumin (a bit more if you like)
2 small/medium yellow squash diced
4 ounce can of green chilies (mild or hot) I used mild
15 oz can of black beans, drained and rinsed
15 oz can of navy beans, drained and risned
4 cups chicken broth
2 cups corn
14/15 oz can crushed tomatoes
fresh parsley, one bunch
fresh cilantro, one bunch
salt/pepper to taste

Saute onion in olive oil, 1/2 teaspoon salt and butter till soft.
Add your diced butternut squash and garlic and cook 2 minutes.
Add your tomato paste (optional) and cook 2 minutes.
Add the rest of your ingredients (not parsley or cilantro) and simmer for 30 minutes.
Taste for salt and pepper.
Add your fresh parsley and cilantro and then serve right away.

I used butternut squash that was already peeled and cut in the produce section. It is close to the bagged lettuce blends. I bought a one pound package and cut it up smaller so that it would easily fit on a spoon while having the soup.
I prefer things chopped fairly small to fit on a spoon as you eat.

This is delicious and does not take long to make, I highly recommend this!
