My Best Tender Meatballs with Michael's Home Cooking
How I make my favorite meatballs.
Ingredients:
3 slices of bread
2 eggs
1 and 1/2 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon table salt
1/2 teaspoon pepper
2 garlic cloves
1/2 cup Locatelli Pecorino
1 pound of ground beef
Mix all ingredients together except the ground beef. Then mix in the ground beef and form into 4 or 5 large meatballs.
Cover the meatballs with sauce, at least 3/4 of the way up on the meatballs.
Bake 275F for 3 or 4 hours covered.
Sauce:
I used 3 pounds of very ripe tomatoes. I peeled and chopped the tomatoes.
3/4 to 1 cup onion
1 clove garlic
3 Tablespoons olive oil
6 ounces tomato paste
1 cup water
1 teaspoon sugar
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 teaspoons dried oregano leaves
1 bay leaf
Sauté your onions with the olive oil in a pot until translucent.
Add your chopped garlic and sauté for a minute.
Add the rest of ingredients and simmer for 40 minutes.
