Baked Ziti with Michael's Home Cooking

My version of the classic baked ziti.
Ingredients:
6 ounces ricotta
1/4 teaspoon red or black pepper
1/4 teaspoon table salt
1 Tablespoon olive oil
8 ounces mozzarella
3/4 cup romano or parmesan
3/4 pound ziti pasta (3 and 1/2 cups uncooked)
2 teaspoons table salt for boiling water
Italian sausage is optional, as much or little as you like
2 or 3 garlic cloves
1/4 teaspoon pepper
28 ounce can crushed tomatoes
3/4 cup of the pasta water
salt
basil and oregano
8 inch X 8 inch baking pan
Bake @400F for 20 minutes or so

Method:

Heat oven to 400F

Mix 6 ounces of ricotta, 1 Tablespoon good quality olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper

Mix 8 ounces mozzarella and 3/4 cup romano or parmesan

Boil ziti in water with 2 teaspoons table salt till al dente, then drain reserving 3/4 cup of pasta water

Brown Sausage (you can leave the sausage out or substitute with something else)

Add chopped garlic (2 or 3 cloves) and 1/4 teaspoon black pepper

Add 28 ounce can of crushed tomatoes

Taste for salt

Add the cooked pasta and 3/4 cup of the water you boiled the pasta in

Place half of your pasta mixture into your 8 inch by 8 inch baking pan

Add your ricotta cheese mixture

Add rest of your pasta mixture

Top with your mozzarella mixture

Bake 20 minutes @ 400F

Allow to rest 10 minutes

Serves six people or 3 teenagers
