Grilled bean cake tacos feed a family for very little
Here is how I make grilled bean cakes for very little money.
I soak 1 cup of beans overnight and then in the morning I cook the beans in my little Hawkins pressure cooker at low heat for 12 minutes after it begins hissing on high heat. I add enough water to cover the beans by an inch. I add parsley flakes and a spoon full of Italian dressing to the water and a little turmeric and pepper.
After the beans are done I drain them and add them to a bowl and add the following ingredients.
1 onion
3 carrots
2 ribs of celery
1 cup of oats
3/4 cup of cornmeal
peas
1 egg
parsley flakes
2 tablespoons of Orrington farms Chicken Bouillon
2 tablespoons of oil
pepper flakes
black pepper
salad olives
To adjust the liquid content of the mix I add some of the bean juice saved from the cooking of the beans. About a half a cup does it for me.
I cook the cakes on medium high heat for 15-20 minutes.
My favorite way to eat them is cold in a taco shell with lettuce and cheese or put them in a toaster oven topped with tomato sauce and cheese or just cold alone as a snack.
If you are having a cash flow problem I recommend you learn how to make these bean cakes and you get a little pressure cooker to cook your low-cost beans.
This is a wonderful recipe as nearly all of the ingredients are very low in cost. I buy my cans of beans from the LDS Mormons online and the #10 cans of beans will last for 30 years. You just need to add a few vegetables and oats and cornmeal to make a very tasty and protein-filled nutritious item to add to your diet. The recipe is very flexible, you can easily add a lot of greens or other root vegetables if they were more available. It is good to know if times get tough you have a food staple like bean cakes ready to sustain you. I have stocked up on taco shells and will be making these a lot more often.
