DELICIOUS Navy Bean Soup | Super Healthy, Super Good! | Nonna Says Mangia Classic

A Nonna Says Mangia classic. So easy and healthy to make - and of course crazy delicious - this protein packed bean soup delivers Italian homestyle goodness in every bite. Cooking in big batches provides lots of leftovers for the week!

INGREDIENTS
Navy Beans - 5 Cups, **VERY IMPORTANT soak your beans in 12 cups of water over night
Olive Oil - 3 tablespoons
Onion - 1 large, chopped
Carrots - 3, chopped
Celery Root - 1, chopped
Celery Stalks - 3 chopped (one cup)
Ham - 1 cup, chopped in cubes
Garlic Cloves - 3, chopped
Fresh Parsley - 1/2 cup, chopped
Vegetable Bouillon Cubes - 2
Water - 12 cups
DIRECTIONS
In a large pot over the stove, add olive oil, onions and ham - Sauté for a minute

Add the Carrots, Celery, Garlic and celery root, Sauté for a couple minutes ,

Add the Navy beans

Add the Bullion Cubes and Parsley

Cover with water and Simmer for 1.5 hours, or until Beans are tender.
