Nonna's Vegan Lentil Loaf • Italian Style Veggie Loaf

This recipe combines a medley of fresh vegetables, aromatic herbs, and hearty lentils, all baked to perfection and topped with a tantalizing glaze for a meal that's sure to please even the most discerning palates. Whether you're a seasoned chef or a home cook looking to impress, Nonna's Lentil Loaf is a flavorful and versatile option that's perfect for any occasion.

INGREDIENTS:
Veggie Mix / Wet Mix
- Mushrooms – 1 tray, 400 grams
- Sweet Potato - 2
- Carrots – 4
- Zucchini – 2
- Sweet Peppers 2
- Celery – 4 stalks
- Garlic – 5 cloves?
- Italian Parsley – ½ cup
- Lentils – 2½ cups, cooked
- Onions – 3 medium

Veggie Cook Prep
- Olive Oil – 3 tbsp
- Onions – 2, medium
- Garlic – 2 cloves
- Sea Salt – 4 tsp

Dry Mix / Loaf Prep
- Oats – 1½ cups, crushed
- Italian Seasoning – 2 tsp
- Nutritional Yeast – 1 tsp
- Black Pepper – 1 tsp
- Smoked Paprika – 1tsp
- Flax Seeds – 2 tsp
- Italian Parsley – ½ cup

Glaze Topping
- Tomato Paste – small tin, 5.5 oz
- Apple Cider Vinegar – 1 oz
- Agave Syrup – 2 tbsp
DIRECTIONS:
1. Prep Veggies:
• Wash and coarsely chop all the veggies.
• In a food processor, pulse the vegetables (including the cooked lentils) until finely chopped, then return them to their original bowls.

2. Cook Veggies:
• Heat a large pan over medium heat.
• Sauté onions for a minute, then add garlic and cook until golden.
• Gradually add veggies to the pan in 30-second intervals, starting with celery/onions, then mushrooms, and so on, seasoning with salt as you go.
• Cook the veggie mixture for 5 minutes, then set aside to cool slightly.

3. Prepare the Final Loaf Mixture:
• Transfer the cooked veggie mixture to a large bowl.
• Add the dry ingredients (crushed oats, Italian seasoning, nutritional yeast, black pepper, smoked paprika, flax seeds, and parsley) and mix until well combined.
• Spoon the mixture into lined loaf pans, brushing the parchment with oil for browning.
• Flatten the top of the loaves for an even surface.

4. Prepare the Glaze:
• Mix all the glaze ingredients (tomato paste, apple cider vinegar, and agave syrup) in a small bowl until combined.

5. Glaze the Loaves:
• Lightly brush oil over both loaves.
• Generously brush the glaze over the top of each loaf, ensuring full coverage.

6. Bake the Loaves:
• Preheat the oven to 400°F (200°C).
• Cover the loaves with aluminum foil and bake for 35 minutes.
• Remove the foil and bake uncovered for an additional 25 minutes until golden brown.
• Let the loaves cool before slicing and serving.
