SPICY ITALIAN SAUSAGE PASTA With Fresh Spinach
This spicy sausage pasta with loads of fresh baby spinach is a super tasty Italian pasta recipe. I use hot Italian sausage and Calabrese chili oil, but feel free to use sweet sausage and/or omit the chili oil. This whole recipe takes under 30 minutes. Get your pasta going, saute the sausage until cooked through, and make a quick 5-minute sauce. It's that simple! I hope you enjoy this easy pasta with sausage and spinach recipe!

Ingredients:
▪1.5 pounds ground hot Italian
sausage
▪1 pound pasta - penne, rigatoni, etc.
▪3 ounces tomato paste
▪28 ounce can plum tomatoes
▪3 tablespoons olive oil
▪1 large bunch baby spinach
▪3 cloves garlic
▪1/2 cup dry white wine *optional*
▪1/2 cup basil leaves
▪1 tsp Calabrese chili paste or dried
chili flakes
▪salt/pepper to taste
Instructions:
1. Cook pasta until al dente and reserve pasta water.
2. Saute 3 cloves of garlic until golden in a 1/4 cup of olive oil over medium-low heat.
3. Remove garlic and add the ground sausage to the pan. Turn heat to medium and break apart with a wooden spoon. If using add the chili oil and saute for 1 more minute.
4. Once sausage is almost finished cooking (about12-15 minutes) add in the wine and turn heat to high.
5. After 3 minutes turn heat back down to medium-low and add in the tomato paste. Cook out for 5 minutes, spreading into pan with wooden spoon. Add in the crushed plum tomatoes and bring sauce to a simmer.
6. If sauce is too thick add a 1/2 cup of water to thin a bit.
7. Remove half of the sauce and set aside. Add al dente pasta to sauce pan and cook for 1-2 minutes more to thoroughly coat pasta.
8. Add in the spinach leaves and toss to wilt the spinach. Finally taste test the sauce and make final adjustments to salt and pepper before serving. Use extra sauce if required or serve on the side. Enjoy!
