Easy Pasta with Zucchini

This pantry pasta has zucchini, chickpeas, and cannellini beans. But, it's all about making a quick, good meal with what you have on hand. Any small pasta can be used. I used pipette, but ditalini, small shells, tubetti, etc would all be good. Omit or add any veggie or beans you like. I hope you enjoy this pantry pasta recipe!

Ingredients:
▪1 pound small pasta
▪1/4 cup plus olive oil
▪2-3 zucchini (or any veggie you have)
▪6 ounce can tomato paste
▪6 cups plus pasta water
▪4 cloves garlic
▪1/2 - 3/4 cup grated Pecorino Romano
▪(2-3) 16-ounce cans chickpeas/cannellini beans (or any beans you have)
▪salt/pepper/crushed red pepper to taste

Instructions:
1. Cook pasta until halfway done. Reserve all pasta water.
2. In a large pan saute garlic and/or onions in a 1/4 cup olive oil over medium-low heat until translucent.
3. Add in the chopped zucchini and stir for 2 minutes.
4. Next, add in the tomato paste and cook for 5-7 minutes.
5. Add in 8 cups of pasta water and stir. Turn heat to medium-high.
6. To the pot, add in the pasta and cook stirring frequently. Cook until pasta is finished (about5-10 minutes) adding more pasta water as required when too much evaporates.
7. Season with salt/pepper and/or fresh herbs.
8. If a more soupy consistency is desired, add more pasta water.
9. Serve with grated cheese. Enjoy!
