[Eng-Recipe] How to make Fried Dough Stick (油條[油炸鬼])

材料及份量:中筋粉(Plain flour /all-purpose flour)250g、發粉(baking powder)2g、食用梳打粉(baking soda / bicarb of

soda)2g、鹽(salt)4g、油(oil)8g、清水(water)150g

做法:粉類混合加鹽拌勻,分次加入清水混合後加入油搓至光滑不黐手(約數分鐘),蓋好保鮮紙待鬆弛2至3小時。

取出麵糰壓平切條狀,將兩片麵條重叠,兩面中央輕壓出條紋,炸時輕輕拉長麵條,以150°c油温炸至兩面金黃色熟透。

PS:炸時油温保持150°c最為理想。

Ingredients: Plain flour/all-purpose flour 250g, Baking powder 2g, Baking soda/bicarbonate of soda 2g, Salt 4g, Oil 8g, Water 150g
Instructions: Add the salt with the flour and mix together, slowly add water several times and knead into dough then add oil and knead until it is smooth. Cover the dough with cling film and let it sit for 2-3 hours.
Place the dough on a surface and cut in half, then roll it out and cut into strips. Stack 2 strips together and using a cocktail stick press in the middle of the stacks, flip the stack and press the other side.
Before frying stretch the dough sticks out and fry until they are golden brown on both sides.
PS: When frying the oil temperature at 150°c is ideal.
