Soft White Sourdough with a Perfect Crumb
Every homemade loaf is a miracle!
First, I knead the dough; so many things affect its quality! Is the starter healthy, and what's the quality of the flour? And what about the temperature in the house?
When all these conditions are met, you get such wonderful homemade bread! I bake it on a stone in my Dutch Rofco B10 oven.
Ingredients for 2 loaves of bread:
- 420 g of water (+15-30 g additional)
- 100 g whole grain flour
- 500 g bread flour
- 120 g sourdough starter
- 25 g sugar
- 12 g salt
- 25 g butter
