The Best Sourdough Pumpkin Focaccia Bread full recipe
There’s something almost magical about baking focaccia bread at home. 🏠
The scent of warm dough and roasted pumpkin fills the air, the quiet joy of watching it rise, alive and full of promise. In this video, I’ll take you through the slow, beautiful ritual of making pumpkin spiced focaccia — a loaf that feels like fall itself.
This is a high hydration Pumpkin Focaccia bread recipe and I had to knead the dough by hand after using the mixer.

I bake it with #sourdough but also add a pre-ferment made with 1 g of fresh yeast.
Here are the ingredients:
**Sourdough Starter:**
- 30 g water
- 15 g sourdough starter
- 30 g bread flour
**Yeast Starter:**
- 1 g fresh yeast
- 30 g water
- 30 g flour
**Dough:**
- 220 g water + 30 g additional
- 60 g pumpkin puree
- 350 g bread flour
- 60 g sourdough starter
- 80 g yeast starter
- 6,5 g salt
- 10 g olive oil
The preparation method combining warm and cold long fermentation makes this bread incredibly nutritious and easy to digest! The extended fermentation process enhances nutrient bioavailability, reduces gluten content for improved digestibility, and develops a rich, complex flavor.
