❤️ Hello everyone! Today, I want to share a recipe for a sourdough pie with Seasonal Plums and blueberries. On a cool autumn or winter evening, there’s nothing better than enjoying a slice of this sweet and airy pie with a cup of tea or hot cocoa!
You can make this pie with plums or other berries, whichever you prefer.
I’d also like to mention that I use enriched sourdough dough for this recipe. The preparation method and fermentation makes this pie incredibly nutritious and easy to digest! The sourdough fermentation process enhances nutrient bioavailability, reduces gluten content for improved digestibility, and develops a rich, complex flavor.
#Ingredients for the Dough:
- 170 g milk
- 400 g flour
- 80 g sourdough starter
- 1 g fresh yeast or 0.3 g dry yeast
- 90 g sugar
- 5 g salt
- 75 g eggs (1 egg + 1 yolk)
- 80 g butter
- Vanilla extract
- Orange zest and cinnamon (optional)
Ingredients for the #Starter :
- 50 g water
- 20 g sourdough starter
- 50 g flour
Filling:
- Fruits (I used seasonal plums and blueberries)
- Cornstarch
- Sugar
