Yaki Udon (Halal Version) – Episode 48

Yaki Udon is Japanese fried noodles. Udon noodles are thick, chewy, and white, made with wheat flour and salted water. Anyway, it's yummy and easily made in about half an hour.

Ingredients:

400 gr udon
1 TBSP sesame oil
2.5 TBSP soy sauce (kecap asin)
3/4 TBSP dark soy sauce (kecap manis)
1 TBSP oyster sauce (saus tiram)
1/4 tsp white pepper (merica)
1 sachet dashi - optional (kaldu ikan bubuk jika ada)
4 cloves garlic, crushed (bwg putih, haluskan)
75 gr onion, sliced (bombay)
125 - 150 gr carrot, cut into matchsticks (wortel)
125 gr bean sprouts (toge)
150 - 200 gr mushroom balls, sliced (bakso
jamur) - If you don't have (like) mushroom balls, you can use chicken, beef, prawns, calamari, or chikuwa as the substitute
2 stalks spring onion, sliced

Method:

1. In a small bowl, combine sesame oil, soy sauce, dark soy sauce, oyster sauce, and white pepper.
2. Bring a large pot of water to a boil. Add udon and cook for 2 mins. Drain and set aside.
3. Pour the oil into a wok set over medium heat. Add garlic and onions. Stir-fry until fragrant, about one minute.
4. Add mushroom balls and carrot, stir occasionally for 2 mins.
5. Add sauce mixture and dashi, stir for 1 min
6. Add bean sprouts, stir for 30 seconds, and then add the udon, and stir-fry until the sauce has been absorbed, one to two minutes. Turn off the heat and sprinkle with spring onions.
7. Garnish with a sprinkling of bonito flakes (optional)

PS: Taste and adjust your creation is a huge must!! Something like soy sauce, dark soy sauce, and dashi powder can taste drastically different depending on the brand you use
