Chicken Stir-Fry | Easy & Quick
ASIAN STIR FRY CHICKEN
Ingredients:
2 chicken breast , cut into thin strips
Marinate:
1/2 teaspoon red chilli powder
1/2 inch ginger , grated
2 tablespoons dark soy sauce
Mix together along with the chicken strips & leave to marinate for 15 minutes.
3 tablespoons cornflour
1 egg white
Add these to the marinated chicken , mix well and deep fry till crisp
Garnish:
1 medium red onion , sliced
1 inch ginger, cut into juliennes
Deep fry the onion & ginger till golden & crisp.
Reserve the oil to make the sauce.
Sauce:
1/2 medium size red & green chillies, sliced
1/2 medium size red onion, sliced
4 spring onions, cut into roundels (Reserve some for garnish)
3 cloves garlic, finely chopped
1 teaspoon cornflour mixed with a couple of tablespoons of water
2 tablespoons brown sugar
3 tablespoons water
1 tablespoon apple cider vinegar
1 tablespoon dark soy sauce
Mix well till smooth, keep aside
Heat a couple of tablespoons of the reserved oil from frying the onion & ginger.
Add sliced chillies, red onion, chopped garlic - lightly sauté
Add the soy, brown sugar and water mixture
Bring it to a boil and add the fried chicken.
Mix together gently and add a couple of teaspoons of corn flour slurry, bring the mixture to a boil and let the sauce thicken.
Transfer the chicken into a bowl and garnish with chopped spring onion, fried red onion & ginger.
Enjoy.
