Chicken Onion and Cheese Roll by Chef Vineet Bhatia

Ingredients

Bread
250g flour, plus extra to dust
1 teaspoon sugar
1 teaspoon yeast
Salt
150ml warm water
Oil to grease the bowl
100g grated cheese
In a bowl pour 3 tablespoons of warm water, add sugar, dry yeast and stir. Leave for 10 minutes for the yeast to get activated.
Add the flour and salt to a bowl, pour in the activated yeast and mix it into the flour. Add warm water in small batches to form a sticky dough.
Transfer the dough to a worktop, dust with flour and gently work on the dough to form into a sticky dough ball.
Grease the bowl with oil and place the dough into the bowl and also coat it with the oil.
Cover the bowl with cling film and let the dough rest for 1 hour in a warm part of the kitchen for the yeast to react with the dough and help it double in size.
Transfer the dough to a flour-dusted worktop, knead the dough until it becomes a soft dough. Divide the dough into smaller balls and keep it under a cloth for 30 minutes to rest and rise.
Roll the dough to form a thin circular flatbread.
Spoon the chicken filling inside along with grated cheese(reserve some to garnish) and roll like a spring roll.
Place the bread on a butter paper lined greased baking tin, apply egg was and sprinkle some grated cheese on top rest the bread for 5 minutes and then bake the bread in a preheated oven at 180C/350F for 30 minutes or until the bread cooks and turns golden.
Remove the bread from the baking tin and enjoy it warm.

CHICKEN CHEESE FILLING
2 tablespoon oil
1 red onion, chopped
120g cooked chicken, chopped
1 red chilli, cut into strips
2 tablespoon soft cheese
1 tablespoon lemon juice
1 spring onion, chopped
2 tablespoon coriander leaves, chopped
2 tablespoon grated mozzarella
Heat oil in a pan, add chopped red onion and saute for a minute.
Add the chopped cooked chicken and red chilli, cook for a minute and add the soft cheese.
Switch off the heat and let the heat in the mixture helps to soften the cheese further and stir to mix well.
Now add the lemon juice, spring onion, coriander and grated mozzarella. Fold the mixture gently and ensure it's not mashed up, cool the mixture and use as filling for the bread.
(no salt is added as the cooked chicken and cheese has enough salt, do taste and adjust if required0
