Cucumber Bites Appetizer | Quick, Easy Refreshing Summer Snacks

Cucumber bites appetizer is a quick, easy refreshing summer snacks recipe.
It is made of cucumber and some very healthy ingredients like cottage cheese, fresh veggies like corns, onion, tomato, chillies, carrots, capsicum etc. Basically any fresh veggie that you can eat raw can be used in this recipe. And bonus is that I have shared two quick ways to make and serve these bites.
It is then flavoured with some spices and seasoning. spices like Black pepper, chaat masala, red chillie powder, roasted cumin powder etc with salt gives a wonderful taste in these recipes.
The best part of this recipes is that it is easily customizable and so quick to make. These cucumber bites appetizer is totally a fuss-free recipe and even a favorite among kids.

Detailed recipe

Cottage cheese - 1/2 cup
Hung Curd - 1 tbsp (optional)
Boiled corns - 2 tbsp
Chopped carrots - 2 tbsp
Chopped onion - 2 tbsp
Chopped tomatoes - 2 tbsp
Chopped green chillies - 1 tbsp
Salt as per taste
Black pepper powder - 1/2 tsp
Roasted cumin powder - 1 tsp
Chat masala - 1/2 tsp
Cucumbers - 2

1st Recipe

1. Mix everything, except cucumber. You may add 1 tbsp hung curd too.(optional)
2. Cut cucumber into half , peel and deseed it nicely. No moisture should be there. Fill the cucumber cavity with the cottage cheese filling. Press nicely and cut into bite size pieces.

2nd Recipe

1. Take a cucumber and using a peeler take out thin strips as shown in video.
2. Keep them upside down on a plate.
3. Add some cottage cheese filling on one end and roll the cucumber strip.
4. Secure the end with a tooth pick.
5. Likewise make all cucumber rolls and serve with sauce or dip.
