Ragi Ambali / ராகி அம்பாலி / ರಾಗಿ ಅಂಬಲಿ / రాగి అంబలి
Jab South India mein garmi 40 degree jaati thi — log fridge nahi, yeh drink use karte the. Ragi Ambali ek fermented ragi drink hai jo 2000 saal se Karnataka, Andhra aur Tamil Nadu ke gharon mein banti aa rahi hai. Calcium content cow milk se 5 guna zyada — aur doctors aaj bhi garmiyon mein recommend karte hain. Yeh sirf ek recipe nahi — ek survival tradition hai.
FULL RECIPE
Ingredients
Ragi Flour / रागी आटा – 1 cup
Water / पानी – 4 cups (cooking) + 5 cups (fermentation)
Sour Curd / खट्टा दही – 1 to 1.5 cups
Ginger / अदरक – 2 tsp (chopped)
Green Chilli / हरी मिर्च – 1–2 (finely chopped)
Onion / प्याज़ – 1 small (finely chopped)
Curry Leaves / करी पत्ता – 8–10 (finely chopped)
Coriander / धनिया – handful (finely chopped)
Salt / नमक – to taste
Method
1️⃣ Ragi flour aur 1.5 cups cold water ka smooth slurry banao — koi lumps nahi
2️⃣ 2.5 cups paani boil karo thick vessel mein — slurry dheere dheere daalo, continuously stir karo
3️⃣ Medium flame pe 6–8 min pakao till soft dough consistency aaye
4️⃣ Cover karke 2 min low flame pe steam do — phir flame off, thanda hone do
5️⃣ Warm haath se 4–5 balls banao — clay pot mein rakho, 5 cups paani se dhaako
6️⃣ Raat bhar ferment karo — 8 to 12 ghante room temperature pe
7️⃣ Subah balls ko usi paani mein completely mash karo
8️⃣ Sour curd daalo — consistency adjust karo paani se
9️⃣ Adrak, hari mirch, onion, curry leaves, coriander daalo — mix karo
🔟 Namak to taste — chilled serve karo

Fermentation ke liye clay pot use karo — terracotta surface temperature naturally regulate karta hai, fermentation consistent rehti hai aur ek subtle earthy depth aati hai jo steel pot kabhi nahi de sakta.
