Why this recipe matters:
South India mein Makar Sankranti ko Pongal kehte hain — nayi fasal, Surya upasana aur parampara ka parv.
🍚 SAKKARAI PONGAL (Sweet Pongal)
Serves: 4–5 | Time: 35–40 min
Ingredients:
Raw rice (short/medium grain) – ½ cup
Yellow moong dal – ¼ cup
Jaggery (grated) – ¾ to 1 cup
Milk – 1 cup
Water – 2½ cups
Desi ghee – 3 tbsp
Cashew – 10–12
Kishmish – 1 tbsp
Green cardamom powder – ½ tsp
Edible camphor – 1 tiny pinch (optional)
🔥 METHOD (STEP–BY–STEP)
1️⃣ Rice & Moong Dal Soak + Roast (KEY CHANGE)
Raw rice aur yellow moong dal ek saath wash karo
Dono ko 20–30 minutes soak karo
Soaked rice–dal ko achhi tarah drain karo
Heavy pot / cooker mein 2 tbsp desi ghee heat karo
Rice–dal ko medium–low flame par roast karo
Jab tak halka nutty aroma aaye
Color change nahi, sirf aroma
👉 Is step se Pongal ka flavour aur depth dono badhta hai
2️⃣ Cook Base
Ab roasted rice–dal mein add karo:
Milk – 1 cup
Water – 2½ cups
Pressure cooker / heavy pot mein bahut soft & mushy hone tak cook karo
👉 Texture khichdi se thoda zyada soft hona chahiye
3️⃣ Jaggery Syrup
Pan mein jaggery + ¼ cup water
Melt karo, strain karo (impurities remove karne ke liye)
4️⃣ Combine
Cooked rice–dal mein jaggery syrup add karo
Low flame par 5–7 minutes simmer
Continuous stir (neeche lagna nahi chahiye)
5️⃣ Final Tempering
Pan mein bacha hua ghee heat karo
Cashew golden fry
Kishmish phulao
Sab Pongal mein daalo
Add:
Cardamom powder
Edible camphor (sirf tiny pinch)
Mix gently 🔥
✅ PERFECT TEXTURE CHECK
Spoon uthao → Pongal slowly flow kare
Zyada tight ho jaaye → thoda hot milk add kar sakte ho
