📝 Recipe (Chef Ayush Jindal’s Sargi Special Meethi Mathri)

Ingredients:
400g maida, 100g suji, pinch of salt, 100g ghee (for moin), ice-cold water (as needed), ghee for frying.
For Chashni: 1 cup sugar, 1 cup water, saffron, rose & kewra water, 1–2 cardamom pods, food color (optional).
Method:
1️⃣ Maida, suji & namak mix karo. Ghee daal kar ache se rub karo jab tak sandy texture na ban jaye (mutthi band karo, shape hold kare).
2️⃣ Ice-cold water se semi-soft dough bana lo, dhak kar 30 mins rest do.
3️⃣ Patli roti belo, strips cut karo. Maida-ghee ka paste lagakar roll karo aur shape do.
4️⃣ Low-medium flame pe golden brown fry karo, thanda hone do.
5️⃣ Ghee mein elaichi bhuno, fir sugar + water + kesar + gulab jal + kewra daal kar ek-taar ki chashni banao.
6️⃣ Garam chashni mein mathri daal kar ache se coat karo, garnish with nuts & silver vark.
