HAPPY EASTER (HOT CROSS BUNS) GT STYLE
Ingredients:
FLOUR MIXTURE:
1 package (11 grams) active dry yeast
1 cups warm whole milk
1 large egg
2 Tbsp. butter softened
1/4 cup sugar (white or brown)
1/2 teaspoons salt
½ tsp ground cinnamon
½ tsp nutmeg
3 cups all-purpose flour
1 tsp orange peel or zest
1 tsp. essence (your choice)
½ cup raisins (any dried fruit)
GLAZE:
2 tbsp. water.
2 tbsp. Sugar
2 tbsp. butter
½ or ¼ cup orange juice (fresh or box)
A piece of Cinnamon stick
Directions:
Flour Mixture-In a small bowl, dissolve yeast in warm milk. In a large bowl, combine flour, orange peel, essence, egg, butter, sugar, salt, spices, yeast mixture, beat on medium speed until smooth or knead until smooth, stir or knead in raisins (any dried fruit) add enough flour to form a soft dough (dough will be sticky).
knead until the dough is smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour.
Punch down dough. Turn onto a lightly floured surface; divide and shape into 12 balls. Place 2 inches apart on greased baking sheets. Cover with kitchen towels; let rise in a warm place until doubled, 45 minutes-1 hour. Preheat oven to 370°.
Using a sharp knife, cut a cross on top of each bun. Bake for 15-20 minutes or until golden brown.
GLAZE- In a pan add butter, sugar, orange juice water, and spice boil until it evaporates to form a sticky slightly runny consistency
When the buns are finish brush on the orange juice glaze and serve with a glass of milk
