Same Day Bread Made with Sourdough Discard
One morning I fed my starter and had a little left, about 40-50 grams. This amount of starter wasn't enough to bake bread, so I decided to experiment and make a mixed bread with sourdough and yeast starter. 🍞❤️

Sourdough starter discard 50 grams
Yeast starter:
- 50 g water
- 2 g FRESH yeast
- 50 g bread flour
Ingredients:
- 180 g of water
- 30 g milk
- 270 g bread flour
- 30 g whole wheat flour
- 50 g sourdough starter
- 100 g Yeast starter
- 12 g sugar
- 6,5 g salt
- 20 g butter
Here's a refined summary of my sourdough bread-making process:
1. Yeast Starter preparation is done in the morning and peaks by 1 hour.
2. Flour and water are mixed and rested for 30 minutes during the autolyse to develop gluten.
3. All ingredients are incorporated in a mixer as demonstrated step-by-step in the video.
4. The dough ferments at room temperature for 2.5–3 hours during warm fermentation.
5. It is then pre-shaped, shaped, and placed in the proofing basket for 1,5- 2 hours
6. The oven is preheated to 240°C. The dough is scored and baked covered for 15 minutes, then uncovered at 210°C for another 15 minutes until golden brown.
7. Finally, the bread is cooled before slicing to enjoy its flavor and texture fully.
This method creates a light, digestible, and nutritious loaf with a rich flavor profile. Perfect for homemade bread!
