Chopped Steak with Michael's Home Cooking
You can make this comforting Chopped Steak with Onion Gravy for your family any night of the week. For great flavor grind your own beef if you can and use a little red wine to take your gravy to the next level. Serves four.
Ingredients:
2 pounds ground beef
1 Tablespoon Coarse Ground Salt OR 1 and 1/2 teaspoons table salt
1 teaspoon black pepper
1/2 scant teaspoon dried thyme leaves
20 cloves garlic (you only use 10)
olive oil
1 jumbo onion
1 package brown gravy mix
1/3 cup red wine (I used port wine)
Place 20 cloves of garlic into a tiny baking dish and cover with plain olive oil.
Cover with aluminum foil and bake 45minutes @ 350F
You will use half of this and keep the remainder in the refrigerator for up to three weeks. Good with morning eggs if you are not working that day.
Mix your ground beef, salt, pepper and dried them leaves.
Form into four patties.
Fry patties in pan for 4 minutes, then flip and put into your 350F oven for five minutes to finish.
This give you time to heat your gravy.
Yes I said 400 for baking the chopped steak, I meant 350, I apologize.
You can fry your chopped steak on top of the stove and not use the oven if you wish.
To make your gravy, I like to slice the onion from top to bottom, not from the equator.
Cook onion in 1 Tbs butter and oil.
When cooked down, add the wine if using to deglaze your pan.
Add your brown gravy mix and cup of water.
Your gravy will come together in 3 minutes.
Baking your garlic will soften the flavor and add a special flavor to your chopped steaks, finding little tender morsels as you enjoy your meal.
