Retarded sourdough bread

Retarding bread in the fridge has a lot of advantages like releasing the best flavour of the flour into your bread. It also makes scoring easier and it gives you flexibility about the baking schedule. You should, however, pay close attention to the temperature you have in your fridge.

For this recipe, the ingredients are:
- 725g bread wheat flour (12.5% protein)
- 100g whole wheat flour
- 100g spelt flour
- 650g water
- 175g sourdough at 100% hydration
- 18g salt
