Oatmeal chocolate chip cookies (no sugar or flour)
Healthy Oatmeal Chocolate Chip Cookies (No Flour or Sugar)
Ingredients:
- 1 1/4 cups quick-cooking oats
- 1 cup ground oatmeal
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon kosher salt
- 1/4 cup unsweetened applesauce
- 4 tablespoons unsalted butter, melted and cooled
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1/2 cup honey
- 1/3 cup dark chocolate chips
- 1/4 cup raisins (optional)
- 1/4 cup well-chopped raw walnuts or pecans (pecans work best)
Instructions:
1. Place 1 cup of oatmeal into a mixer and blend until it reaches a flour-like consistency.
2. In a bowl, combine the ground oatmeal, quick-cooking oats, baking powder, cinnamon, and kosher salt. Set aside.
3. In a separate bowl, mix together the unsweetened applesauce, melted butter, egg, vanilla extract, and honey until well combined.
4. Add the wet ingredients to the dry ingredients and mix until thoroughly incorporated.
5. Stir in the dark chocolate chips, and if desired, the raisins and chopped nuts.
6. Transfer the cookie dough to the refrigerator and let it chill for at least one hour to solidify.
7. Preheat your oven to 350°F (175°C).
8. Grease a baking pan and shape the cookie dough by hand into individual cookie shapes.
9. Place the shaped cookies onto the greased baking pan and bake in the preheated oven for 10 to 12 minutes, or until golden brown.
10. Remove the cookies from the oven and allow them to cool completely.
11. Once cooled, enjoy these delicious and healthy oatmeal chocolate chip cookies that are loved by kids.
