Nourishing Breakfast Muffins for Weight Management

Wet Ingredients:
- 1 cup peeled and grated carrots
- 1 cup unsweetened applesauce
- 2 large eggs
- ¼ cup olive oil or vegetable oil
- 2 teaspoons vanilla
- ⅓ cup light brown sugar

Dry Ingredients:
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon ground nutmeg
- 1¼ cups whole wheat flour
- ¾ cup rolled oats
- ⅓ cup chopped walnuts (plus extra for topping, optional)
DIRECTIONS:

1. Preheat the oven to 375 degrees Fahrenheit.
2. In a mixing bowl, combine all the wet ingredients and mix thoroughly.
3. Add the dry ingredients to the wet ingredient mixture and stir until well combined.
4. Grease a muffin tin or line it with muffin liners.
5. Fill each muffin cup with the muffin mixture. (makes 12)
6. Place the muffin tin in the preheated oven and bake for 20 to 22 minutes.
7. After baking, allow the muffins to cool for 10 minutes before enjoying.
