Healthy Crispy Oven-Baked Chicken Sandwich

Ingredients:

- 4 skinless, boneless chicken breasts
- 1 cup Greek yogurt
- Juice and zest of 1 lemon
- 1 teaspoon hot smoked paprika
- 2 1/4 tablespoons garlic powder
- 2 teaspoons salt
- 3 cups crushed corn flakes
- 3 tablespoons whole wheat bread crumbs
- 1 tablespoon chopped fresh thyme

Directions:

1. In a ziplock bag, combine the Greek yogurt, lemon juice and zest, hot smoked paprika, 1 tablespoon of garlic powder, and 1 teaspoon of salt. Mix well and set aside.

2. In a separate bowl, mix the crushed corn flakes, whole wheat bread crumbs, and chopped fresh thyme. Set aside.

3. Season the chicken breasts and place them in the ziplock bag with the yogurt mixture. Allow the chicken to marinate in the refrigerator for at least 1 hour or overnight.

4. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).

5. Remove the chicken breasts from the yogurt mixture, allowing any excess marinade to drip off. Coat the chicken evenly with the cornflake mixture, pressing gently to adhere.

6. Place the coated chicken breasts on a baking sheet and bake in the preheated oven for 25 minutes, or until the chicken is cooked through and crispy. Flip the chicken breasts once halfway through cooking.

7. Once the chicken is cooked, assemble your sandwich using your preferred bread and toppings.
