MENEMEN Healthy and Popular Turkish Breakfast Delight
Ingredients:
- 2 tablespoons of olive oil
- 1 medium-sized onion
- 1 clove of garlic
- 1 medium-sized green pepper
- 4 medium-sized tomatoes
- 2 eggs
- 1 tablespoon of tomato paste
- Salt, to taste
- Ground pepper, to taste
- 1 teaspoon of oregano (optional)
- Optional pepper flakes
Instructions:
1. Heat olive oil in a pan and sauté the onions and garlic until they become translucent, approximately 2 minutes.
2. Add the green pepper to the pan and cook for an additional 1 to 2 minutes over medium heat.
3. Incorporate the tomatoes and tomato paste into the pan. Stir well and continue cooking until the tomatoes become soft.
4. Push the tomatoes to one side of the pan and crack the eggs into the empty space. Season with salt and ground pepper.
5. Gently fold the eggs into the tomato mixture, ensuring they are thoroughly cooked.
6. Optional: Sprinkle oregano and pepper flakes for added flavor.
7. Drizzle a little more olive oil on top for extra richness.
8. Garnish with parsley, if desired.
