LENTIL SOUP WITH POTATOES AND CARROTS
LENTIL SOUP WITH POTATOES AND CARROTS ( shhh kids love this)
Prep time: 10 minutes
Cook time: 30 minutes
Total time: 40 minutes
Serves: 4
Ingredients:
- 2 tablespoons olive oil
- 1 medium-sized onion, chopped
- 1 medium-sized carrot, chopped
- 1 medium-sized potato, peeled and cubed
- 1 cup lentils
- 1 garlic clove, minced
- 1 tablespoon tomato paste
- 4 to 5 cups water
- 1 vegetable bouillon cube
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
- 2 teaspoons salt (adjust to taste)
Directions:
1. In a large pot, heat olive oil over medium heat.
2. Add chopped onion and sauté until it becomes soft and translucent.
3. Stir in the minced garlic and cook for an additional minute.
4. Add the tomato paste and cook for another minute, stirring well.
5. Add the chopped carrot, potato, and lentils to the pot. Stir to combine all the ingredients.
6. Sprinkle the cumin, black pepper, and salt over the mixture. Mix well to evenly distribute the spices.
7. Pour in the water and add the vegetable bouillon cube. Stir everything together.
8. Bring the soup to a boil, then reduce the heat to medium-low and let it simmer for about 30 minutes, or until the lentils, carrots, and potatoes are tender.
9. Once all the ingredients are well cooked and blended, use a hand mixer to puree the soup until smooth and creamy.
10. Taste the soup and adjust the seasoning if needed.
11. Serve hot, optionally garnishing with a squeeze of lemon juice and some chopped parsley.
