Today, I'll be showing you my ultimate chicken pot pie recipe that is so easy to make but incredibly satisfying. When you think of classic comfort food, you think of chicken pot pie for good reason. The combination of chicken and vegetables in that rich, creamy sauce paired with the buttery, flaky crust on top has no equal!

This is based on my mom's recipe which includes some non-traditional filling such as bacon and egg. That might sound strange, but I promise you, it takes this classic dish to the next level. When you make this for your friends and family, I guarantee you, they will be begging for seconds and the recipe! So make extra!

INGREDIENTS:
Filling:
1 cup chicken diced (drumsticks or thighs or breast, no skin)
4 strips bacon diced
2 cloves garlic minced
1 cup mushrooms sliced
2/3 cup onion diced (1 small)
1/4 cup diced carrots diced
1/4 cup green peas
1 hard hard-boiled egg diced
1 tablespoon vegetable oil

Chicken Marinade:
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon sugar
2 teaspoons cornstarch
1 tablespoon vegetable oil

White sauce:
2 tablespoons butter
1/3 cup all purpose flour
1 cup chicken broth
¼ teaspoon salt
2 tablespoons milk

1 - 2 pie crusts (9 inches)
1 egg yolk for brushing pie crust
