河婆饗宴-八珍玉食之二 -河婆菜粄 (Hakka Dumplings)

河婆菜粄
食谱提供:刘秀华女士
皮料:
500g 粘米粉
120g 薯粉
1500ml (3碗)水
适量的油
馅料:
1kg五花肉 (三层肉),蒸熟,切丝
1.8kg 韭菜或唐山蒜仔
300g 虾米,炒至干香,剁碎
10块豆干,煎香,切丝
3小匙盐
少许胡椒粉
做法:
• 馅料:
先将韭菜或唐山蒜仔洗干净晾干水分、
再切粒,加入所有的馅料拌均备用。
• 皮料:
将水在锅中煮滚、慢慢加入粘米粉和薯粉,
用木棍搅拌均匀,盖上锅盖焖煮约5分钟,
离火倒入盆中,加入适量水将粉团揉至光滑。
• 将粉团分成小份,搓圆成杯型,包入馅料
成元宝形,排放在已涂上油的香蕉叶的蒸笼中。
• 大火蒸约15分钟,取出趁热涂抹上热油即可。
Ho Po Vegetable Dumplings
Skin:
500g rice floor
120g tapioca floor
150g water
Some oil
Filing:
1kg pork belly steamed until cooked, then shredded.
1.8kg chives or Chinese leeks
300g dried shrimp, fried and roughly chopped
10 pieces of bean curd (tofu) pan fried and shredded.
3 tsp salt
dash of white pepper
Method:
• Filling:
Clean the chives or Chinese leeks and drain well, cut into small pieces. Add in all remaining ingredients and mix well.
• Skin:
In a pot bring water to boil, slowly add in rice flour, tapioca flour and mix using a wooden spatula until well combined. Cover and cook for 5 minutes. Remove from heat and pour into a mixing bowl. Add in enough water and knead into smooth dough.
• Divide the dough into small portions, form each into a cup shape and wrap up filling. Arrange onto a steamer (lined with greased banana leaves).
• Steam at high heat for 15 minutes. Remove and brush with cooked oil while still hot.
