GRAPE JAM

MAPLE SPICE GRANOLA
2 cups oats
1 cup almond pulp/meal
1 tbsp coconut flakes (optional)
1/2 cup pumpkin seeds (optional)
1/2 up walnuts
1/2 tsp cinnamon
1/2 cup maple syrup
1/4 tsp vanilla extract
1/4 cup pecans
-bake at 375 F for 45 minutes, flipping half way through
VANILLA SIMPLE SYRUP
1 vanilla pod
1/2 cup sugar
1/2 cup water
ORANGE SPICE TEA
1 - 2 cups organic orange peels
2 tsps black tea
1 cinnamon stick
cloves to taste
VEGGIE STOCK
1-2 tbsps olive or avocado oil
1-2 cups vegetable scraps
dried mushrooms (optional)
6 cups water
5-10 peppercorns
salt to taste
-boil, then lower to a simmer. Let reduce to desired concentration
NO-CHIK’N STOCK
1-2 tbsps olive or avocado oil
1-2 cups carrot, onion, & celery scraps
leek, scallion, fennel, yellow/orange bell pepper (optional)
4-6 sprigs of sage, thyme, oregano, and parsley
1 bay leaf
2-3 tsps granulated garlic or garlic cloves
salt to taste
